If you have never heard of Bessie Munson or "Bless the Cook' prepare yourself for a rare treat.
Mrs. Munson grew up on a farm in East Texas. She learned how to cook good old fashioned soul food from her Grandmother and her Mother.
Her excellent culinary skills lead her to diverse and distinguished long food career. This cook book is a reflection of her diversity. Mrs. Munson worked under the tutelage of Helen Corbitt at Nieman Marcus. She was the food director of the 1200 dollar a week Camp Waldemar for girls in Hunt Texas.
You will find the traditional Soul Food dishes done the old time tested ways, such as teacakes, greens, yeast rolls, old fashioned biscuits but you will also find dishes like a french bean and chicken casserole and her own original recipes. She has a pot roast recipe made with apple cider that was gone in 20 minutes and had everyone asking me for the recipe. See the index for a list of recipes included in the book.
